Produced in accordance with the strict standards of D.O.P Queso Manchego, this traditional Spanish cheese undergoes a careful process of coagulation, whey separation, salting, drying, and extended maturation.

Ingredients
Pasteurised Manchega sheep’s milk, salt, lactic ferments, stabiliser (calcium chloride), rennet, and lysozyme (egg derivative).

Production Process
Pasteurised sheep’s milk is transferred to vats and combined with authorised ingredients under D.O.P Manchego regulations. The milk is coagulated using rennet and ferments, forming curds that are drained, moulded, and pressed. The cheese is then salted in brine, dried, treated, and matured under controlled temperature and humidity conditions.
Once matured, the cheese may be coated with approved rind treatments and is vacuum-packed as whole cheeses, halves, or wedges to preserve freshness and quality.
